  • 1 cup sharp cheddar cheese shredded

  • 2 tablespoons ranch seasoning mix
  • 1 –2 jalapeños finely diced (seeds removed for less heat)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1/2 cup plain breadcrumbs plus more for coating
  • 1 large egg
  • Oil for frying or spray for baking

For the Creamy Dip:

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon ranch seasoning
  • 1 teaspoon lemon juice or vinegar
  • Optional: pinch of cayenne or smoked paprika

Instructions
 

Step 1: Make the Filling

  • In a large bowl, mix together shredded chicken, cheddar cheese, cream cheese, ranch seasoning, diced jalapeños, garlic powder, onion powder, salt, and pepper. Stir until well combined. Add the breadcrumbs and egg, then mix again until everything sticks together.

Step 2: Shape the Poppers

  • Use your hands or a small scoop to shape the mixture into bite-sized balls or nuggets (about 1 tablespoon each). If the mixture feels sticky, refrigerate it for 10–15 minutes before shaping.

Step 3: Bread the Poppers

  • Roll each popper in breadcrumbs to coat thoroughly. For an extra-crispy finish, double coat them by dipping in a beaten egg and breadcrumbs again.

Step 4: Cook the Poppers

  • Fry Option: Heat oil in a deep pan over medium heat. Fry the poppers in batches for 3–4 minutes per side or until golden brown and crisp.
  • Bake Option: Preheat oven to 400°F (200°C). Place poppers on a parchment-lined baking tray, spray with cooking oil, and bake for 18–22 minutes.
  • Air Fry Option: Preheat air fryer to 375°F (190°C). Air fry for 12–15 minutes, flipping halfway.
