Ingredients
  

  • 3 –4 lbs beef brisket
  • 1 large onion sliced
  • 4 garlic cloves minced
  • 3 –4 carrots chopped
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp flour or cornstarch for thickening
  • Optional: splash of red wine fresh rosemary or thyme

Instructions
 

  • Sear the Brisket (Optional): Heat olive oil in a skillet over medium-high heat. Sear the brisket on both sides for 3–4 minutes until browned.
  • Layer Vegetables: Place sliced onions, garlic, and chopped carrots at the bottom of the slow cooker.
  • Add the Brisket: Place the seared brisket on top of the vegetables.
  • Mix Sauce: In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, paprika, salt, and pepper. Pour over the brisket.
  • Cook: Cover and cook on LOW for 8–10 hours or HIGH for 5–6 hours, until the brisket is fork-tender.
  • Make Gravy: Remove brisket and set aside. Strain the cooking liquid into a saucepan. Mix flour or cornstarch with water and whisk into the liquid. Simmer until thickened.
  • Serve: Slice brisket against the grain. Spoon gravy over the top and serve with your favorite sides.
