Ingredients
  

  • 1 sheet puff pastry store-bought or homemade, thawed
  • 3 –4 ripe peaches or 1 can of peach slices, drained
  • 2 tablespoons granulated sugar
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch optional, for thicker filling
  • 1 egg for egg wash
  • Powdered sugar for dusting (optional)
  • Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Peaches

  • Slice fresh peaches thinly (or drain canned peaches) and place them in a bowl. Add lemon juice, granulated sugar, brown sugar, cinnamon, and vanilla extract. Mix well and let sit for 5–10 minutes to enhance the flavors. If you prefer a thicker filling, add cornstarch and stir.

Preheat and Prep the Puff Pastry

  • Preheat your oven to 375°F (190°C). Roll out the puff pastry slightly on a floured surface to smooth creases. Cut into rectangles for individual pastries or keep it whole for a tart.

Assemble the Pastries

  • Arrange peach slices in the center of each rectangle or artistically over the whole sheet, leaving a 1-inch border around the edges. Fold or crimp the edges slightly. Optional: sprinkle extra brown sugar on top for caramelization.

Apply Egg Wash

  • Beat the egg and brush the edges of the pastry to ensure a golden, glossy finish.

Bake

  • Place on a baking sheet lined with parchment paper. Bake for 20–25 minutes, or until the pastry is puffed and golden and the peaches are tender and juicy.

Cool and Garnish

  • Allow to cool for a few minutes. Dust with powdered sugar and garnish with fresh mint leaves if desired. Serve warm or at room temperature.
