Ingredients
  

  • 1 lb thinly sliced beef ribeye or sirloin
  • 1 tablespoon vegetable or olive oil
  • 1 large onion thinly sliced
  • 1 large green bell pepper thinly sliced (optional)
  • 4 slices provolone cheese or American cheese
  • 4 soft hoagie rolls or sandwich buns
  • Salt and black pepper to taste

Instructions
 

Prep the meat and vegetables:

  • Slice the beef as thinly as possible. If using fresh meat, partially freeze it for 20–30 minutes first. Thinly slice the onion and green bell pepper.

Cook the vegetables:

  • Heat the oil in a large skillet over medium heat. Add the sliced onions and green bell pepper (if using), cooking for 7–10 minutes until soft and caramelized. Remove from the skillet and set aside.

Cook the beef:

  • In the same skillet, add the thinly sliced beef. Season with salt and pepper. Cook over medium-high heat until browned and no longer pink, stirring frequently (about 4–6 minutes).

Combine and melt cheese:

  • Add the cooked onions and peppers back into the skillet with the beef. Stir to combine. Lay the cheese slices over the top and allow them to melt for 1–2 minutes. Stir lightly if you want a fully mixed melt, or leave the cheese sitting on top.

Assemble the sandwiches:

  • Slice the hoagie rolls open without cutting all the way through. Fill each with the hot, cheesy beef mixture. Serve immediately while warm and melty.
