Ingredients
  

  • 1 lb ground beef 85/15 for best flavor
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 2 cloves garlic minced
  • 1 tablespoon Worcestershire sauce
  • ½ cup beef broth
  • 1 tablespoon ketchup
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 4 –6 brioche or hamburger buns
  • 6 slices provolone cheese or preferred melting cheese

Instructions
 

Sauté the Veggies:

  • Heat olive oil in a large skillet over medium heat. Add diced onion and both bell peppers. Cook for 5–7 minutes until softened and lightly caramelized. Stir in the minced garlic and cook for another minute.

Brown the Beef:

  • Add the ground beef to the pan. Cook while breaking it apart with a spatula, until browned and no longer pink. Drain excess fat if needed.

Build the Flavor:

  • Stir in Worcestershire sauce, beef broth, ketchup, tomato paste, and smoked paprika. Add salt and black pepper to taste. Simmer on low for 5–8 minutes until the mixture thickens slightly.

Add Cheese:

  • Lay slices of provolone cheese directly over the meat mixture. Let it melt, then gently fold into the beef for a rich, cheesy finish.

Assemble and Serve:

  • Toast the buns if desired. Spoon a generous portion of the cheesy beef mixture onto each bun. Top with more cheese if you’d like, cover with the top bun, and serve warm.
