Ingredients
  

  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning
  • 1 can Rotel tomatoes diced tomatoes with green chilies
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1/2 cup sour cream
  • 1 bag sturdy tortilla chips 10–12 oz
  • 2 cups shredded cheddar or Mexican blend cheese

Optional toppings:

  • Sliced jalapeños
  • Diced tomatoes
  • Chopped cilantro
  • Sliced green onions
  • Black olives
  • Corn kernels

Instructions
 

Preheat oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.

    Cook the beef in a skillet over medium heat until browned. Drain grease.

      Add taco seasoning and Rotel tomatoes to the beef. Simmer for 5 minutes.

        In a separate bowl, mix the cream of mushroom soup, cream of chicken soup, and sour cream until smooth.

          Begin layering in the baking dish:

          • Crushed tortilla chips
          • Meat mixture
          • Creamy soup blend
          • Shredded cheese
          • Repeat layers, ending with a generous layer of cheese on top.

          Cover with foil and bake for 25 minutes.

            Remove foil and bake an additional 10 minutes until cheese is bubbly and golden.

              Top with fresh garnishes and serve warm.
