  • 4 cups fresh or frozen blackberries
  • 1 cup granulated sugar plus extra for sprinkling
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • Optional A pinch of cinnamon or nutmeg

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x9-inch baking dish or cast iron skillet.
  • Mix berries: In a bowl, combine blackberries, lemon juice, and 1 cup of sugar. Let sit for 10–15 minutes to macerate.
  • Make batter: In a separate bowl, whisk together flour, baking powder, salt, melted butter, milk, and vanilla until smooth.
  • Assemble: Pour the batter into the baking dish. Do not stir. Spoon the blackberry mixture evenly over the batter.
  • Bake for 40–45 minutes until the top is golden brown and the berries are bubbling.
