Ingredients
  

  • 1 lb 450g white fish fillets (cod, tilapia, or haddock), cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 medium onion finely chopped
  • 3 garlic cloves minced
  • 1 large red or orange bell pepper diced
  • 2 cups fresh tomatoes chopped (or 1 can diced tomatoes, 14 oz)
  • 2 cups fish or vegetable broth
  • 1 tsp chili flakes optional
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley or cilantro chopped
  • Juice of 1 lemon

Instructions
 

  • Heat olive oil in a medium pot over medium heat. Add the chopped onions and garlic, sautéing until softened and fragrant (about 3-4 minutes).
  • Add diced bell peppers and tomatoes to the pot. Cook for 5 minutes, stirring occasionally, until the vegetables start to soften and release juices.
  • Pour in the fish or vegetable broth and bring the mixture to a gentle simmer. Season with salt, black pepper, and chili flakes if using.
  • Carefully add the fish pieces into the simmering stew. Cook for 5-7 minutes until the fish is opaque and flakes easily with a fork.
  • Remove from heat and stir in fresh parsley or cilantro. Squeeze lemon juice over the stew and gently mix to combine.
  • Serve hot, paired with crusty bread, rice, or a light salad. Enjoy!
