  • 2 large cucumbers thinly sliced
  • 3 medium ripe tomatoes chopped or sliced
  • 1 medium red onion thinly sliced
  • 1/4 cup white vinegar or apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sugar optional, to balance acidity
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon fresh dill or parsley finely chopped (optional)

Instructions
 

  • Prepare the Vegetables: Wash all produce thoroughly. Peel the cucumbers if desired (optional), then thinly slice them. Chop or slice the tomatoes into bite-sized pieces. Thinly slice the red onion.
