Ingredients
  

  • 1 ½ cups chopped pecans
  • 1 ½ cups light brown sugar packed
  • 1 cup all-purpose flour
  • 2 large eggs
  • ½ cup unsalted butter melted
  • 1 tsp pure vanilla extract
  • ¼ tsp salt

Optional:

  • ½ tsp ground cinnamon
  • ¼ cup mini chocolate chips
  • 2 tbsp maple syrup

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
  • In a large bowl, combine the chopped pecans, brown sugar, flour, and salt (and cinnamon if using).
  • In a separate bowl, whisk the eggs, melted butter, and vanilla extract until smooth.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake for 30–40 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.
  • Remove from oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • Slice and serve warm or at room temperature. Optionally, drizzle with maple syrup or glaze for extra indulgence.
