Ingredients
  

For the Chicken & Marinade:

  • 4 boneless skinless chicken thighs or breasts
  • 1 ripe mango peeled and diced
  • 1 cup pineapple chunks fresh or canned
  • 3 tablespoons soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon chili flakes optional, for a spicy kick
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • Salt and pepper to taste

For Garnish (Optional):

  • Fresh chopped cilantro or parsley
  • Lime wedges

Instructions
 

Make the Marinade:

  • In a blender or food processor, combine diced mango, ½ cup of pineapple chunks, soy sauce, honey, lime juice, olive oil, smoked paprika, garlic powder, and chili flakes. Blend until smooth.

Marinate the Chicken:

  • Place the chicken in a bowl or ziplock bag. Pour the marinade over the chicken, ensuring it's fully coated. Cover and refrigerate for at least 1 hour (overnight is best).

Prepare the Glaze (Optional):

  • Reserve any leftover marinade. Simmer it in a small saucepan for 5–10 minutes until it thickens slightly into a glaze. Set aside.

Cook the Chicken (Choose One Method)

    Grill:

    • Preheat the grill to medium-high heat. Grill the marinated chicken for 5–7 minutes per side or until nicely charred and fully cooked.

    Oven:

    • Preheat oven to 400°F (200°C). Bake chicken in a greased baking dish for 25–30 minutes. For crispy edges, broil for the last 3 minutes.

    Stovetop:

    • Heat 1 tbsp oil in a skillet over medium-high heat. Cook chicken for 6–8 minutes per side, until caramelized and cooked through.

    Add Glaze & Serve:

    • Brush the chicken with the reduced glaze (if using). Garnish with fresh herbs and serve with remaining pineapple chunks, rice, or a fresh salad.
