  • 1 lb 450g chicken sausage, sliced into rounds
  • 1 cup orzo pasta
  • 1 ½ cups chicken broth
  • 1 cup heavy cream or half-and-half for a lighter option
  • ½ cup sun-dried tomatoes chopped
  • 2 cups fresh spinach
  • 3 cloves garlic minced
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions
 

  • Cook the sausage: Heat olive oil in a large skillet over medium heat. Add sliced chicken sausage and cook until browned and slightly crispy, about 5-7 minutes. Remove from skillet and set aside.
  • Sauté garlic and toast orzo: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add orzo pasta and toast for 2-3 minutes, stirring frequently.
  • Add broth and cook orzo: Pour in chicken broth, bring to a simmer, and cook orzo until tender and most of the liquid is absorbed, about 10 minutes.
  • Make it creamy: Stir in heavy cream and Parmesan cheese, cooking for 2-3 minutes until the sauce thickens slightly.
  • Add vegetables and sausage: Mix in sun-dried tomatoes, fresh spinach, and cooked sausage. Cook until spinach wilts and everything is heated through, about 2-3 minutes.
