Ingredients

  • 1 lb ground beef lean or 80/20 for flavor
  • 1 tbsp olive oil or butter
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika optional but recommended
  • Salt and pepper to taste
  • 1/4 cup ketchup or BBQ sauce adds moisture and flavor
  • 4 –6 slices cheddar cheese or a blend of your favorites
  • 4 slices thick white bread Texas toast, sourdough, or brioche work well
  • Butter or mayonnaise for toasting bread
  • Optional add-ins: caramelized onions pickles, jalapeños, spinach, or tomatoes

Instructions

Cook the Ground Beef

  • Heat olive oil or butter in a skillet over medium heat. Add the ground beef and season it with garlic powder, onion powder, paprika, salt, and pepper. Cook until browned, breaking the meat apart with a spatula.
  • Once fully cooked, drain excess fat if needed. Stir in ketchup or BBQ sauce and let it simmer for 2-3 minutes. This enhances the flavor and keeps the beef moist.

Prepare the Bread

  • Spread butter or mayo on the outside of each slice of bread. This will help achieve that golden, crispy texture once grilled.

Assemble the Sandwich

  • On the unbuttered side of one slice, place one or two slices of cheese. Add a generous layer of the seasoned ground beef, another slice of cheese, and top with the second slice of bread (buttered side facing out).
  • Repeat for the second sandwich if making two.

Grill to Perfection

  • Heat a skillet or griddle over medium heat. Carefully place the sandwich and press lightly with a spatula. Cook for 3–4 minutes on each side or until the bread is golden brown and the cheese is fully melted.

Serve and Enjoy

  • Cut in half and serve immediately while the cheese is hot and gooey. Pair with a simple side salad, fries, or a light soup.
