  • 4 oz cream cheese softened
  • 1 –2 tablespoons Greek yogurt or olive oil optional, for smoother texture
  • 1 small garlic clove optional, minced
  • Freshly ground black pepper to taste

For the Roasted Strawberries:

  • 1 cup fresh strawberries hulled and halved
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • Pinch of salt

Optional for Serving:

  • Crusty baguette slices crackers, or pita chips
  • Fresh mint or basil leaves for garnish
  • Extra honey or balsamic glaze for drizzling

Instructions
 

Step 1: Roast the Strawberries

  • Preheat your oven to 375°F (190°C) and line a small baking sheet with parchment paper.
  • Spread the halved strawberries on the sheet in a single layer.
  • Drizzle with balsamic vinegar and honey or maple syrup. Sprinkle with a pinch of salt.
  • Roast for 20–25 minutes, until the strawberries are soft, glossy, and beginning to caramelize. Set aside to cool slightly.

Step 2: Make the Whipped Feta

  • In a food processor, combine feta cheese and softened cream cheese.
  • Blend for 1–2 minutes, scraping down the sides as needed, until smooth and fluffy.
  • For a creamier texture, add 1 tablespoon of Greek yogurt or olive oil.
  • Optional: Add a small clove of garlic and a few cracks of black pepper.
  • Blend again until fully incorporated and taste to adjust seasoning.

Step 3: Assemble and Serve

  • Spread the whipped feta onto a serving dish or shallow bowl.
  • Top with the roasted strawberries and their juices.
  • Garnish with fresh mint or basil and an extra drizzle of honey or balsamic glaze if desired.
  • Serve with toasted bread or crackers while the strawberries are still slightly warm.
